Nature doesn't work to a production schedule. 

Every flowering season is different. 

Some years bring abundant rainfall. 

Others deliver long, dry periods. 

Temperatures fluctuate. 

Flowering times change. 

Bee populations respond to seasonal conditions. 

The amount of nectar produced varies from year to year. 

Every one of these natural factors influences the honey eventually harvested. 

That's why one season may produce a slightly darker honey. 

Another may be lighter. 

One harvest may have a richer caramel note. 

Another may reveal brighter floral characteristics. 

Just like vintage wine or extra virgin olive oil, every harvest reflects the unique conditions of that particular season. 

 

It Begins Long Before the Bees Arrive 

Every jar of genuine Australian Manuka honey begins with a flowering Leptospermum plant. 

Australia is home to more than 80 recognised species of Leptospermum, growing across an extraordinary range of landscapes. 

For more than 10 years, Gather By has worked alongside growers, beekeepers and research partners to better understand the remarkable relationship between Australian Leptospermum, bees and premium Manuka honey. 

Our understanding has been built through ongoing field observations, nectar and honey testing, commercial plantings and, perhaps most importantly, learning from nature itself. 

Every flowering season teaches us something new. 

Every harvest adds another piece to the puzzle.

What Does "Raw" Really Mean? 

The word "raw" is often used when describing premium honey, but what does it actually mean? 

For us, raw Manuka honey is about preserving the natural character of the honey as closely as possible. 

That means careful harvesting. 

Minimal processing. 

Gentle handling. 

Avoiding unnecessary heat during packing. 

Our goal isn't to make every jar look identical. 

Our goal is to preserve what nature has created. 

Although Gather By now exports premium Australian Manuka honey to customers in more than ten countries, we continue to hand-pack our honey here in Australia. 

It takes more time. 

It requires more care. 

But we believe craftsmanship still matters. 

 

Why Honey Naturally Crystallises 

One of the most common questions we receive is: 

"Why has my honey crystallised?" 

The simple answer is: 

Because it's completely natural. 

Honey is made up primarily of two naturally occurring sugars—fructose and glucose. 

Fructose remains dissolved more easily. 

Glucose is less soluble and, over time, naturally forms tiny crystals. 

Different floral sources produce different natural ratios of fructose and glucose, which is why some honeys crystallise more quickly than others. 

Manuka honey is no exception. 

Crystallisation is not a sign that your honey has spoiled. 

It doesn't mean sugar has been added. 

In fact, many people see crystallisation as a hallmark of genuine, minimally processed honey. 

Nature is simply continuing its work. 

 

How To Gently Return Honey To A Liquid State 

If you prefer your honey in a smoother, more liquid form, it can easily be returned to its natural consistency. 

Simply place the sealed jar into warm water at around 35–40°C. 

Allow it to warm gently, turning the jar occasionally if required. 

Patience is the key. 

Avoid boiling water. 

Avoid microwaving. 

Gentle warming helps preserve the natural character of the honey while returning it to a pourable consistency. 

 

Nature Creates the Character. Science Confirms the Quality.  

One of the wonderful things about raw Australian Manuka honey is that every harvest has its own personality.  

The colour may vary slightly.  

The flavour may be richer or lighter.  

  

The aroma may change from one flowering season to the next.  

Some harvests crystallise sooner than others.  

These are all natural characteristics of a minimally processed food.  

What doesn't change is our commitment to quality.  

Every batch of Gather By Manuka honey is independently laboratory tested to verify its authenticity and MGO level before it reaches our customers.  

That's why every jar proudly displays its MGO rating.  

The "+" symbol means the honey contains at least the MGO level shown on the label, often a little more, never less.

More Than Just Natural Sugars 

Another question we occasionally hear is: 

"Why does the Nutrition Information Panel list sugars?" 

The answer is simple. 

The sugars shown on the Nutrition Information Panel are the naturally occurring sugars present in honey itself. 

Nothing has been added. 

Honey naturally contains fructose and glucose collected by bees from flower nectar. 

Unlike refined table sugar, however, honey is a remarkably complex natural food. 

It also contains naturally occurring enzymes, amino acids, organic acids, polyphenols, flavonoids and aromatic compounds that contribute to its unique flavour, aroma and character. 

Every harvest carries its own natural fingerprint. 

 

Why We Take Our Time 

Premium Manuka honey isn't rushed. 

After harvesting, every batch is carefully monitored, tested and prepared before being packed. 

Our role isn't to change what nature has created.
