
🍯 Manuka Power Bites
These no-bake Manuka Power Bites are a nutrient-rich snack packed with superfoods, plant protein, and the immune-boosting magic of raw Australian Manuka honey. Perfect for an afternoon pick-me-up, post-yoga snack, or sweet treat that supports your health — naturally.
✨ Why Manuka?
Raw Australian Manuka honey offers natural antibacterial properties and is rich in antioxidants, making it the perfect addition to a nourishing raw recipe. Unlike processed sweeteners, Manuka supports gut health and immunity while adding a luscious depth of flavour.
📝 Ingredients (Makes 12–15 bites)

1 cup rolled oats (gluten-free if needed)

½ cup raw cashews or almonds

¼ cup shredded coconut

1 tbsp chia seeds

1 tbsp flaxseed meal

¼ cup dried cranberries or goji berries

1 tsp cinnamon
-
1 pinch sea salt
-
2 tbsp almond butter (or tahini)

2 tbsp Gather By Manuka honey (MGO 300+ or higher)

2–3 tbsp filtered water (as needed)
- Dessicated coconut for rolling the balls in before storing
🥣 Instructions

Blend dry ingredients: In a food processor, pulse oats, nuts, coconut, chia, flaxseed, berries, cinnamon, and salt until a fine, crumbly texture forms.

Add wet ingredients: Spoon in almond butter and Manuka honey. Blend again until the mixture begins to stick together.

Adjust consistency: Add 1 tablespoon of water at a time until the mixture clumps when pressed between fingers.

Roll: Scoop out 1 tablespoon portions and roll into balls. Then roll the balls through dessicated coconut

Chill & store: Place on a tray and refrigerate for 30 minutes to firm. Store in an airtight container in the fridge for up to 1 week.
