🍯 Manuka Power Bites

These no-bake Manuka Power Bites are a nutrient-rich snack packed with superfoods, plant protein, and the immune-boosting magic of raw Australian Manuka honey. Perfect for an afternoon pick-me-up, post-yoga snack, or sweet treat that supports your health — naturally.

✨ Why Manuka?

Raw Australian Manuka honey offers natural antibacterial properties and is rich in antioxidants, making it the perfect addition to a nourishing raw recipe. Unlike processed sweeteners, Manuka supports gut health and immunity while adding a luscious depth of flavour.

📝 Ingredients (Makes 12–15 bites)

  • 1 cup rolled oats (gluten-free if needed)

  • ½ cup raw cashews or almonds

  • ¼ cup shredded coconut

  • 1 tbsp chia seeds

  • 1 tbsp flaxseed meal

  • ¼ cup dried cranberries or goji berries

  • 1 tsp cinnamon

  • 1 pinch sea salt

  • 2 tbsp almond butter (or tahini)

  • 2 tbsp Gather By Manuka honey (MGO 300+ or higher)

  • 2–3 tbsp filtered water (as needed)

  • Dessicated coconut for rolling the balls in before storing

🥣 Instructions

  1. Blend dry ingredients: In a food processor, pulse oats, nuts, coconut, chia, flaxseed, berries, cinnamon, and salt until a fine, crumbly texture forms.

  2. Add wet ingredients: Spoon in almond butter and Manuka honey. Blend again until the mixture begins to stick together.

  3. Adjust consistency: Add 1 tablespoon of water at a time until the mixture clumps when pressed between fingers.

  4. Roll: Scoop out 1 tablespoon portions and roll into balls. Then roll the balls through dessicated coconut

  5. Chill & store: Place on a tray and refrigerate for 30 minutes to firm. Store in an airtight container in the fridge for up to 1 week.

🍃 Tips & Variations

  • Add cacao nibs or dark chocolate chips or powdered chocolate for a chocolatey version

  • Roll in extra coconut or sesame for a pretty finish

  • For a protein boost, add a scoop of your favourite protein powder
